I did this cupcake for the Hello Kitty fans. I whipped up a batch of red velvet cupcakes for a couple photos you’ll see over the next couple of days. Aluminum foil style baking cup. I find it’s best to use two baking cups on each cupcake to give them support, and also any cake batter soaking will be absorbed by the inside cup (leaving you with a clean outside cup). Technically, red velvet cupcakes generally have cream cheese icing, but I wanted to keep the kitty from blending into the icing too much.
